Gluten-free and vegan apple crumble
This apple crumble is a tasty way to get in your serving of apples and dates for the day to support your adrenals (which is KEY). The warm cinnamon apples have a caramel-like glaze and pair perfectly with the crunchy oats. This is super healthy as it is vegan, gluten-free, and there are no added sugars.

Top with vegan vanilla ice cream (oat ice cream)
Ingredients for 5x5 pan
Apple mixture:
2 apples peeled and diced
2-4 dates
1 tbsp honey
1/4 cup water
1/2 tsp cinnamon for apples
Juice from 1 lemon wedge
Crumble:
1/2 cup gluten-free oats (we use Bobs Red Mill)
1/2 cup gluten-free or almond flour
2 tbsp arrowroot or tapioca starch
3.5 tbsp vegan butter or ghee melted
1 tbsp honey
2 tbsp chopped almonds (about 10)
1/2 tsp cinnamon Directions
For apples:
Peel and dice apples
In a blender add dates, honey, and water and blend until you have a chunky caramel-like substance
Pour mixture into frying pan on low heat and let cook for 3-4 minutes
Add in apples, cinnamon, and lemon. Cook for 10 minutes or until apples are soft
For crumble:
Mix oats, flour, and arrowroot starch together
Add in melted butter or ghee and honey
Next pour in almonds and cinnamon
Mix all together and push down with a fork
Add in more ghee or water if too crumbly
Bake for 20 minutes at 400 degrees
Add cooked apples and bake for another 10 minutes
