Carrot Cake Bars

Gluten-free and vegan recipe

We love carrot cake so we played around with some ingredients to make healthy carrot cake bars and they actually turned out delicious and super flavorful. They’re super clean and the banana and applesauce give the bread a thick, amazing texture. We also added simplemills frosting to the top which made it taste like a true carrot cake!⁣


-1 cup carrots shredded ⁣

-1.5 tsp vanilla ⁣

-1.5 tsp cinnamon ⁣

-1.5 tsp baking powder⁣

-1/2 tsp nutmeg⁣

-1/2-1tsp ginger ⁣

-1/4 cup nut butter ⁣

-1/4 cup syrup⁣

-1/4 cup coconut sugar ⁣

-1/4 cup apple sauce ⁣

-3/4 banana ⁣

-1/2 tsp salt⁣

-1/2 cup almond milk⁣

-1 cup gluten-free flour ⁣

-1 cup oat flour⁣

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀 ⁣

1. Preheat oven to 375 degrees⁣

2. In a medium-sized bowl, mash banana⁣

3. Add in applesauce, almond milk, nut butter, vanilla, syrup, and carrots. Mix until combined⁣

4. In another bowl mix together flours, coconut sugar, salt, ginger, nutmeg, cinnamon, and baking powder⁣

5. Add the dry ingredients to the wet ingredients and mix until batter forms⁣

6. Pour into 8x8 baking dish and bake for 30 minutes or until a knife comes out clean ⁣
