Vegan and gluten-free recipe
These lettuce cups are so simple yet pack in so much flavor and crunch! Although it looks like a light meal it’ll fill you right up. They’re extremely easy to make and takes less than 10 mins!


𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
- 1 avocado
- 1 can of chickpeas
- 1 tbsp Parsley
- 1/2 tsp Salt
- Juice from half a lemon
- 1.5 tbsp olive oil
- 1-2 tsp Pesto (optional)
- 1/4 cup chopped pistachios
- Romaine or butter lettuce
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
1. Mash avocado in a medium-sized mixing bowl
2. Add parsley, salt, lemon, olive oil, pesto and mix together
3. Add pistachios and mix again
4. Finally, drain and rinse chickpeas and add to the bowl. Lightly mix chickpeas in
5. Wash lettuce and scoop 2 spoonfuls of the chickpea mixture into a piece of lettuce
