Hearty Avo a Day Salad For 2-3

Gluten-free and vegan recipe

And whoever said a salad can’t fill you up? This salad is hearty, delicious, and doesn’t taste like your average joe salad... It’s one of our favorites and packs in a ton of healthy plant-based protein 🥗💪🏽⁣

- 1 squash or zucchini⁣

- 1 yellow onion⁣

- 2 avocados⁣

- 1 can of chickpeas ⁣

- Half of a lemon⁣

- 1/4 cup chopped pistachios ⁣

- Vegan chipolte mayo⁣

- 8-12 cups spinach⁣

- Pinch of salt⁣

- Pinch of pepper⁣

- Pinch of garlic powder⁣

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀⁣

1. Slice the squash into 1/4 inch thick circles and then chop each circle into 4 pieces⁣

2. Slice the onion into 1/4 inch thick circles and dice each circle up after⁣

3. Sauté the squash and onion⁣

4. Mash up the avocados in a bowl and add the juice of half a lemon, pepper, salt, and garlic powder⁣

5. Next mix in the pistachios to the avocado mixture ⁣

6. Drain the chickpeas and mix those in with the avocado mixture as well⁣

7. Put spinach in a large bowl and add the desired amount of the squash mixture as well as the avocado mixture. Top with Chipolte mayo or dressing of choice. We topped with sirkensingtons vegan chipotle mayo!
