Lemon Poppy Seed Muffins With Lemon Cashew Frosting

These muffins are SO good. The texture of both the muffin and frosting is unreal - we can’t stop eating them. You guys have to try these!⁣

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: ⁣

𝘔𝘶𝘧𝘧𝘪𝘯𝘴:⁣

- 3/4 cup applesauce⁣

- 1/2 cup lemon juice⁣

- 1/4 cup maple syrup⁣

- 1/3 cup coconut sugar⁣

- 1/2 cup almond milk⁣

- 1 tsp vanilla extract⁣

- 1 3/4 cup oat flour⁣

- 1 1/4 cup almond flour ⁣

- 1.5 tsp baking soda⁣

- 1/4 tsp salt⁣

- 1 tbsp lemon zest ⁣

- 3 tbsp poppy seeds⁣

𝘓𝘦𝘮𝘰𝘯 𝘊𝘢𝘴𝘩𝘦𝘸 𝘍𝘳𝘰𝘴𝘵𝘪𝘯𝘨:⁣

- 1 cup cashews boiled⁣

- Zest of 1 lemon⁣

- Tbsp almond or coconut oil⁣

- 1/2 cup almond milk⁣

- 2 tbsp vanilla ⁣

- 1 tbsp maple syrup ⁣

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀:⁣

1. Combine applesauce, lemon juice, maple syrup, almond milk, coconut sugar, vanilla, and lemon zest into a bowl and mix⁣

2. Next add in both the oat flour and almond flour, baking soda, salt, poppy seeds and mix until combined⁣

3. Scoop into sprayed muffin tin and put into the oven for 15-20 minutes at 350 degrees ⁣

4. In a blender combine all frosting ingredients and taste. If it’s not sweet enough add more maple syrup⁣

5. After the muffins have cooled, add the frosting to the muffins and enjoy!⁣
