Gluten-free and vegan waffles
Brunch always poses the mother of all questions...and we're notoriously known for taking twenty minutes to answer that question when they bring the menu...the gooey egg sandwich with savory chipotle mayo or the large stack of banana chocolate chip pancakes with a dollop of whipped cream on top? It's the infamous battle between savory or sweet.
Luckily, quarantine time doesn't force us to chose anymore because we found the mecca of all recipes, the best of both worlds, that lets us check off both boxes.
With these mini homemade waffles, you have endless combinations of toppings; melted chocolate with bananas, cinnamon sugar, or a savory roast beef sandwich...the list goes on. These waffles, which satisfy everyone's preferences and cravings, are crisp on the outside and light and airy on the inside. You'll LOVE these bad boys.
2 cups gluten-free flour
2 vegan eggs
1/2 cup olive oil
4 tsp baking powder
1/4 tsp salt
1 3/4 cup dairy-free milk
2 tsp Vanilla
1/4 Coconut sugar
1. Mix all of the ingredients under the waffle batter section together.
2. Split mixture in half into two large bowl.
3. Add the ingredients under 'sweet batter' to one bowl.
4. Add each mixture to a waffle maker.
Melt vegan chocolate, drizzle onto waffles, and top with fruit like banana, strawberries, and add coconut flakes.
Melt ghee on waffles and sprinkle cinnamon on top.
Add syrup to waffles and homemade vegan whipped cream.
Melt vegan cheese on freshly made savory waffles, add vegan chipotle mayo or a spread, add avocado, lettuce, and choice of meat.
