Sweet Potato and Zucchini Stew

Liver Cleanse Approved Recipe


This stew was extremely tasty despite being cleanse approved! The spices and sweet potato made it really hearty. We both said we definitely would’ve eaten this off the cleanse!! ⁣It is also salt and oil-free! #sos #sosfreediet (This can be eaten on days 1-3 of the medical medium 3:6:9 cleanse)⁣. 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:⁣

- 2.5 cups diced sweet potatoes⁣

- 1 cup chopped onion⁣

- 3 garlic cloves minced⁣

- 2.5 cups chopped zucchini ⁣

- 1 tsp cumin⁣

- 1 tsp coriander⁣

- 1/2 tsp turmeric ⁣

- 1 tsp paprika⁣

- 1 cup diced tomato⁣

- 2 tbsp pure tomato paste w/o additives (optional)⁣

- 1/4 cup chopped cilantro⁣

- 1-1.5 cups hot water⁣

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀 ⁣

1. Peel sweet potato and wrap in a damp paper towel. Microwave for 4 minutes. Let cool and chop up before measuring 2.5 cups⁣

2. Put the onions and garlic in a large pot on medium-high heat for 5 minutes. Add in the sweet potato and mix. If they stick to the pan, add a little bit of water ⁣

3. Add the zucchini, cumin, coriander, turmeric, paprika, tomato paste, cilantro, and hot water⁣

4. Stir well, place the lid on, and lower the heat to simmer for 10-15 minutes ⁣

5. Serve with more fresh cilantro if desired
