Gluten-free, dairy-free, plant-based recipe
Although this meal is simple, it's a great way to spruce up your average sweet potato. It’s healthy and surprisingly pretty filling. And did you know that sweet potato is an excellent anti-stress food and is known to help relax muscles, steady nerves, and balance cognitive function? They have healthy glucose and minerals that allow the brain to do its job. Ingredients
2 sweet potatoes
Meat (we used organic ground turkey)
Additional toppings: tomato and sautéed d zucchini
Instructions 1. Poke holes with a fork in the two sweet potatoes 2. Wrap two sweet potatoes individually in a wet paper towel and microwave them for 6 minutes OR bake sweet potato in oven at 400 degrees for 40 minutes. 3. Cut warm sweet potatoes in half and scoop out a little bit of the middle of each sweet potato 4. Place sweet potatoes scoops in a bowl and mix with toppings (we used zucchini, meat, chives, parsley, vegan cheese and seasoned it with onion powder, 5. Place mixture back into the sweet potatoes and warm in the oven on 350 degrees for 15 minutes or so until cheese melts.
