Gluten-free and vegan recipe



This sweet potato gnocchi is delicious and beyond easy with only 3 ingredients. We added vegan pesto to ours which gave it lots of added flavor.
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
- 2 sweet potatoes
- 2 cups of gluten-free flour
- 1/2 tsp salt
- Garlic/onion powder optional
𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀
1. Peel sweet potatoes and wrap each in a damp paper towel
2. Microwave one at a time for 5 minutes each
3. Get a large bowl and mash sweet potatoes. Add salt once mashed and mix
4. Add flour one cup at a time to sweet potato mash and mix until dough forms
5. Put flour on a flat surface. Take 1/8th of the dough and roll into a lot about 1/2 an inch thick
6. Using a knife, cut the log into pieces about 1/2 an inch away from each other
7. Bring a pot of water to a boil and drop 1/4 of the cut gnocchi into the water. Once the gnocchi rise to the surface, remove from the water. Repeat this with the rest of the gnocchi
8. Optional step: put a little ghee, salt, pepper, and garlic powder on a frying pan and sauté gnocchi until crispy
9. Top with sauce of choice!
